The cristates come from a disorderly proliferation of cells in the apex (top of the plant), of uncertain origin, it can be caused by insect bites, chemical injury, bacterial infection, etc.. It eventually grew into convolutions.
That state is not detrimental to the plant instead, it gives a larger area which increases photosynthesis
